I really wanted to give this 5 stars. It is a great purchase, and I am very happy with it. The warming tank is a real value-add. The metal thickness is excellent - not too thin and not too heavy. The welds are all well done. The drain valves are great quality and are easy to use.There are two details that could be improved for that fifth star. The drain valves are slightly above the bottom, so you have to tip the entire evaporator to get most of the liquid out. If the drains were located on the same side, I could slightly slope the whole evaporator to that corner, but they aren't. I have it tilted toward the end for the drains which helps. The thermometer is mounted half way up on the side (too high for smaller batches). When I installed the thermometer, it seated at about the 9 o'clock position (no adjusting it), so it makes reading temps interesting. The thermometer is also in Celsius only (no Fahrenheit) just in case that matters to you.
