I used to own a restaurant, now I just do a lot of canning in the summer. When you need to blend 21 quarts of tomato sauce at a time, a regular household stick blender doesn't cut it. They can only be run two minutes at a time without overheating, don't reach the bottom of the pot, and just don't get the job done. This Vevor 15.7" stick blender can run ten minutes without overheating, easily reaches the deepest of pots, and its 165000 RPM made my tomato sauce silky smooth in less than two minutes. No splashing, and it was able to circulate the whole pot with the bell on the bottom. Impressive. It's very heavy duty, which you expect with a commercial immersion blender, and very powerful. It only has one speed, which may bother some, but frankly when working with large quantities you only need one speed, high. It gave my homemade marinara a silky smooth texture when blending the pulpy fresh tomato purée. I love it. I bought the 15.7", but I probably should have bought the 11" model because even my 21 quart canning pot that we make sauce doesn't need a shaft that long. It's OK, it kept the body from getting messy. You may want to check the depth of your pot before buying the 15.7" model, you may not need it. It's overkill for most small kitchen jobs, so only buy it if you have large amounts to blend.
