Anything that boils below 105°C can be used with this, though be sure to do a cleaning run to be safe. Distilling water and vinegar are very easy. Worked fine a few times, then had the temp sensor's grommet tear through its bracket, letting the sensor come loose and read ambient air instead of the container temp, which could've been dangerous if it was unattended. There may be a separate thermal safety cutoff, but I couldn't easily find it. Don't leave this unattended! When I caught mine overheating, emptied, and shook it, I heard the loose part. Very easy to loosen the screw on the bottom, wrap the grommet with aluminium foil to prevent it slipping through again, and adjust the bracket to hold the sensor to the bottom of the pot again.Since then it has worked well, though the temp is a couple degrees lower than what it reads, it still boils just fine.At the price I paid for it, I'm still happy.
